Soy Sauce Glaced Mushrooms

冷熱皆宜的常備菜,每一口都是Q脆的口感與濃郁的芝麻香和醬香味,習慣會準備一罐放在冰箱裡,下班回家就可以挖一些出來就是一道配飯、麵都很棒的小菜。

This is an easiest side dish that I've ever written. With some roasted white sesame, every bite of it would full with crunchy texture and the fragrance of soy sauce and sesame. I'm used to storing a bottle of this convenient dish. After a long exhausted day, couple of spoons of it with a sauteed chicken breast or a bowl of rice and miso soup can easily make my dinner a little more memorable.


食材 - What You'll Need

  • 鴻喜菇 .............. 1 / 包
  • 雪白菇 .............. 1 / 包
  • 金針菇 .............. 1 / 包
  • 大蒜 .................. 2 / 瓣
  • 醬油 .................. 2.5 / 匙
  • 醬油膏 .............. 2 / 匙
  • 味霖 .................. 1 / 匙
  • 白芝麻 .............. 1 / 小匙
  • 鹽 ...................... 1 / 小匙
  • 1 package of sliced Shiro-shimeji mushroom (or Buna-shimeji mushroom)
  • 1 package of Enoki mushroom
  • 2 cloves of garlic
  • 2 1/2 teaspoons of soy sauce
  • 2 teaspoon of soy paste
  • 1 teaspoons of sweet rice vinegar (mirin)
  • 1 tablespoon of butter. (or oil would be OK.)
  • 1 spoon of roasted white sesame
  • 1 pinch of salt

STEP 1
  • 將各種菇類切除根部洗淨後,雪白菇何鴻喜菇隨意撕開它們,金針菇對半切後根部也撕成較好入口的大小。
  • move the root part of our mushroom and slice them.
  • 大蒜切片。
  • Press and slice the garlic.

STEP 2  
  • 將所有菇類、大蒜下鍋小火慢炒(一小匙油或奶油),炒至菇類的水分全部出來為止。
  • Pour a teaspoon of oil or melt the butter in a large skillet over medium heat. Add all the garlic and cook them util they turn gold. Add all kind of mushroom. Cook and stir them until the mushrooms have soften and release their liquid.

STEP 3 
  • 將所有調味料到入鍋中,利用剛剛炒出來的水分拌勻調味料和食材,等到水分收乾後就可以起鍋,最後撒上白芝麻(或黑胡椒粒)就完成拉~。
  • Seasoning it with soy sauce, soy paste, and sweet rice vinegar and salt. After all liquid has evaporated, sprinkle roasted white sesame and it is ready to be served.



小撇步
  • 簡單到我想不到甚麼撇步。
  • 放在冰箱裡保存得當可以存放約2個星期左右。
  • It can be preserved in the a glass bottle in the fridge for 1-2 week.

我會「盡量」在每篇食譜的最後加上一篇與當篇相關的豆知識,小小步驟可以簡單進階料理喔~!

這一次我想談的是「玻璃罐消毒」,為了衛生和避免保存的食物容易腐敗,我們必須消毒玻璃罐,這裡提供我常用的三個簡單小步驟給大家參考囉:
  • 將玻璃罐放入一個冷水的深鍋加熱,切記要從冷水就要將玻璃罐放下去囉,因為若是滾水放入,有可能因為溫度快速變化導致玻璃罐破裂。
  • 水滾之後記得也要將蓋子也丟下去燙一燙,但若是蓋子內有橡皮圈也要注意一下喔!
  • 最後將罐子倒扣風乾就可以囉。
